The electric kettle operates on a simple principle: when water boils, the steam causes the bimetallic strip in the steam sensor to deform. This deformation activates a lever mechanism that cuts off the power supply. Note that the switch does not reset automatically after power is restored, so the kettle will not reheat automatically following a power outage.
